Washing Meat with Vinegar & Water
Improve Meat Taste and Texture
My friend Eddy showed me how to wash chicken in vinegar and water before putting it in the oven or barbecue. Rather than just washing meat under cold running water (like I always did), Eddy plunges the bird into a bath of water and vinegar and rubs it all over, inside and out, to get rid of all dirt and loose particles.
He then throws away the dirty water and repeats the same thing all over again, washing the chicken twice in this vinegar bath.
Why Washing with Vinegar?
Eddy applies this method of washing with vinegar to all his chicken and pork, and says that the vinegar will clean, desinfect and tenderize the meat, and that the degreasing effect of the vinegar on the meat will allow the taste of dry rub or marinade to penetrate better and deeper into the meat.
So washing with vinegar would not only be beneficial for reasons of health and hygiene, it will also improve taste and texture of the meat.

Ingredients
For a double vinegar bath you will need the following ingredients:
| 2x 3 quarts |
| 2x 1 cup |
| water |
| vinegar |
Preparations
Take a clean non-reactive bowl, pour in 1 cup of vinegar, add 3 quarts of water. This will be the bath tub...
Take a second non-reactive bowl, spread some paper towels on the bottom and against the sides, and put it next to the bath tub, ready to receive one wet chicken...
That's it, ready for the plunge!
Chicken in Bath
Thoroughly wash the chicken, removing any loose or dangling particles. (You will be surprised to see how dirty the water gets!)
Throw away the dirty water, and repeat process for second thorough washing of the chicken.
After washing chicken twice, blot dry using paper towels, or leave to dry in a cool place.
Once the chicken is dry inside and out, it is ready to receive your favourite dry rub or marinade.
